A small stone building in Hobart’s historic Battery Point contains a treasure trove of small batch, hand-made whiskies slowly ageing in a collection of carefully sourced sherry, tawny and bourbon casks. Double distilled in 60L quantities, initially by Jack Lark, and now Head Distiller Luke Lawrence, allowing each whisky to be consistent in its quality but also unique in its own right. With the nuances of single, double or triple cask ageing coming to life under the watchful eye of their master blender Louis Duckett.
