In Volume 1 we have chosen to highlight 4 distilleries. One from each of the main whisky regions, this allows us to showcase the unique characters and flavours that are produced by the Tasmanian climate. This pack also aims to highlight the contrast between not only the climate but also the barrel styles used in each whisky.

There is no right or wrong way to drink whisky but we recommend working from top to bottom in tasting order. This allows you to start with the lighter flavour characters such as ex bourbon and move on to finish with the smokier peated style.

Launceston Distillery

Hangar 17 Housing Launceston Distillery

We chose Launceston to showcase a really classic style of not only Tasmanian whisky but whisky across the world. This is Ex-Bourbon using barrels previously filled at bourbon distilleries in America this style has become a staple across the world as it provides a very vibrant vanilla and caramelised sugar flavour profile while allowing room for the distilleries spirit character to shine through. This is particularly evident in Launceston with the lighter fruit aroma that can be atributed to the Tasmanian barley and local water that is used by the distillery.

Tasting Notes:

Nose: Bright lifted characters of confectionary sweets, caramelised sugars and green fruit.

Palete: Soft mouthfeel carries sweet vanilla, honey and stone fruits.

Hobart Whisky

Since 2014 Hobart Whisky has been releasing unique single malt, produced entirely from Tasmanian ingredients out of their Moonah Facility. Their single cask releases have become bar staples for many whisky enthusiasts. This Ex-Apera (Ex-Australian Sherry) release stands with the best of them bringing forth these dessert like raisin and fudge characters that are perfect for the Christmas period.

Tasting Notes:

Nose: Thick stewed fruits, vanilla and caramel.

Palete: Rich decadant dark fruit, fudge linger with a heavy texture.

Waubs Harbor

Waubs Harbour

Waubs sits as one of the most uniquely located distilleries in Tasmania and would not look out of place sitting on the shorelines of Scotland with its windswept white exterior. This location provides a drastic influence on the whisky being produced from the cool maritime climate blowing off the ocean and into the distillery. This sample comes from the flagship release from Waubs. The use of a combination of Ex-Bourbon and Ex-Tawny casks shines through with salted toffee and creamy raisin and butterscotch.

Tasting Notes:

Nose: Sweet Spice and toffee opens up to a maritime salt influence.

Palete: Toffee accented by a malt biscuit drizzled with honey followed by rich raisin sweetness.

Furneaux

Flinders Island Peat

Sitting on the wild and windswept flinders island Furneaux is possibly the best representation of place we have on this list. The whisky we are showcasing is a at time of release of this pack, unreleased by the distillery itself, one of the few representations of Tasmanian and in this case Flinders island Peat. Sourced from the coastal peat-bogs of the island this influences flavour profile in an earthy and smoky direction.

Tasting Notes:

Nose: Elevated light smoke and vanilla.

Palete: Maritime earth and peat lead the way followed by a bright and lingering acidity.
